The aim of the project was to develop suitable pilot products for a balanced preventive diet for both healthy population groups and diabetics. Based on previous experiments and literature data, various polysaccharide ingredients were tested that could lead to a reduction in the glycemic index of the final product. According to the developed formulations, including different polysaccharides, pilot products were produced and preorganoleptically evaluated. In the intervention study, the glycemic index of finished pilot products was analysed in healthy individuals.
